We are considering brewing an organic version of zeitgeist for the UK.

Is this something you would like to see? Do you care if your beer is organic or not?

Would you be willing to pay 25% extra for an organic beer?

What Jimbeaux says. If it means compromising the flavour, then absolutely not. If it'll taste the same, then I'm not interested in paying extra. If it tastes better then bring it on, and I'll take a punt on the higher price. The Soil Association badge alone won't sell it to me.

With food, organic tends to mean it tastes better. My experience with beer suggests that the same principle does not apply (honorable exceptions for the likes of Cantillon and Marble Beers -- but they'd probably still taste fantastic whatever they were made from).

From an ecological point of view, I'd much rather have a beer made from chemical-laden English or German hops than one brewed with organic hops air-freighted from New Zealand or Oregon.

No, no and no. Unless it tastes better.
